Sweet Potato Pone
6 raw medium sweet potatoes, washed, unpeeled
3 eggs
1½ teaspoons vanilla
½ teaspoon almond extract
3/4 cup light brown sugar
½ cup granulated sugar
1½ cups all-purpose flour
¼ cup vegetable or canola oil (may substitute with butter)
1 teaspoon cinnamon
1 teaspoon nutmeg
Preheat oven to 350 degrees. Grate the sweet potatoes with the fine side of the grater. In large bowl, using a wooden spoon, stir together sweet potatoes and eggs. Stir well. Add vanilla. Stir well. Add following ingredients separately, stirring well after each: Almond extract, light brown
sugar, granulated sugar, flour, oil or softened butter, cinnamon and then
nutmeg. Butter a shallow 9" x 13" baking dish. Bake uncovered 1 hour and 15 minutes or until browned.
Serves 8–10.
Each serving provides 305 calories, 56 grams carbohydrate, 3 grams dietary fiber, 29 grams sugar, 7 grams fat, 56 milligrams cholesterol and 72 milligrams sodium.
